Save A comforting, classic combo featuring creamy tomato soup and crispy, melty grilled cheese perfect for dipping.
This tomato soup and grilled cheese combo became my go-to lunch last fall when the weather started to turn chilly. The simple ingredients and nostalgic flavors always remind me of cozy weekends at home.
Ingredients
- Unsalted butter: Used for both the soup and the sandwich
- Yellow onion: Chopped and sautéed to start the tomato soup base
- Whole peeled tomatoes: 1 can (28 oz / 800 g) including juices
- Vegetable broth: Adds depth and richness to the soup
- Salt and black pepper: Season to taste
- Sourdough bread: 4 slices for the grilled cheese
- Sharp cheddar cheese: 4 slices for maximum meltiness
Instructions
- Sauté aromatics:
- Melt 1 tablespoon butter over medium heat in a medium saucepan. Add chopped onion and cook until soft and translucent, about 5 minutes.
- Build soup base:
- Add canned whole peeled tomatoes with juice and vegetable broth. Bring to a simmer and cook for 10 minutes, stirring occasionally.
- Blend soup:
- Use an immersion blender, or carefully transfer soup to a blender, and blend until smooth. Season with salt and pepper. Keep warm over low heat.
- Assemble grilled cheese:
- Spread softened butter on one side of each bread slice. Sandwich cheddar cheese between two bread slices, buttered sides out, to make two sandwiches.
- Grill sandwiches:
- Heat a skillet over medium heat. Grill sandwiches for 2 to 3 minutes per side, until golden brown and cheese is melted.
- Dunk and serve:
- Cut grilled cheese into strips or cubes for dunking. Serve hot tomato soup in bowls alongside grilled cheese for dipping.
