01 - 4 slices sturdy sourdough or country bread
→ Cheese
02 - 4 oz sharp cheddar cheese, shredded
→ Kimchi
03 - ½ cup well-drained kimchi, chopped
→ Butter
04 - 2 tablespoons unsalted butter, softened
→ Optional Additions
05 - 1 tablespoon sliced green onions
06 - 1 teaspoon toasted sesame seeds
# Method:
01 - Spread softened butter evenly on one side of each bread slice.
02 - Place two slices on a clean surface, buttered side down.
03 - Distribute shredded cheddar evenly over the bread slices.
04 - Spread chopped kimchi evenly atop the cheese. Add green onions and toasted sesame seeds if desired.
05 - Cover with remaining bread slices, buttered side facing out.
06 - Heat a skillet over medium-low heat.
07 - Place sandwiches in skillet. Cook 3 to 4 minutes per side, pressing gently with a spatula until bread is golden and cheese is melted.
08 - Remove sandwiches from skillet. Let rest 1 minute, then slice in half and serve warm.
