# Method:

- Set oven temperature to 350°F (180°C).
- Boil ramen noodles in water for 2 minutes less than package instructions. Drain and set aside.
- Heat vegetable oil in a large skillet over medium heat. Add chopped onion, minced garlic, and grated ginger; cook until fragrant and translucent, about 3 minutes.

- Stir in gochujang, red pepper flakes, crushed tomatoes, soy sauce, rice vinegar, and sugar. Season with salt and pepper. Simmer for 10 minutes until slightly reduced and thickened.
- In a bowl, combine ricotta cheese, egg, half the shredded mozzarella, and half the grated parmesan. Mix until uniform.
- Spread a thin layer of meat sauce on the base of a 9x13-inch (22x30 cm) baking dish.
- Arrange approximately one pack of ramen noodles as the first layer over the sauce.
- Spread one third of the ricotta mixture onto noodles. Top with one third of the meat sauce.
- Repeat layering noodles, ricotta mixture, and meat sauce two more times, ending with meat sauce on top.
- Sprinkle remaining mozzarella and parmesan evenly over surface.
- Cover baking dish with foil. Bake for 20 minutes.
- Remove foil and continue baking 10–15 minutes, until cheese is bubbling and golden.
