# Method:
01 - In a thoroughly cleaned large glass jar, combine filtered water and organic cane sugar. Stir until dissolved using a non-metallic spoon, then introduce water kefir grains or ginger bug along with fresh lemon juice for acidity.
02 - Secure the jar with a breathable cloth or coffee filter, fastening it with a rubber band. Allow the mixture to ferment at room temperature (68–77°F) for 24 to 48 hours, monitoring for light effervescence and tang.
03 - Remove and strain out water kefir grains or ginger bug with a fine mesh strainer; either discard or reserve these cultures for future use.
04 - Pour the fermented soda base into a pitcher, add fresh orange juice, lime juice, and mint leaves. Stir gently to integrate flavors.
05 - Fill glasses with ice cubes, top with mocktail, garnish each serving with an orange slice and optional sprig of mint.
06 - Present immediately to preserve the beverage's natural carbonation and delicate aroma.
