# Method:

01 - In a mixing bowl, combine olive oil, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, salt, black pepper, and juice of lemon. Add beef strips and toss thoroughly to coat. Cover and marinate for 20 minutes at room temperature or up to 2 hours refrigerated.
02 - In a separate bowl, blend together Greek yogurt, tahini, finely minced garlic, lemon juice, chopped parsley, salt, and black pepper. Mix until silky and uniform. Refrigerate until needed.
03 - Preheat a large skillet or grill pan over medium-high heat. Sear marinated beef in batches, stirring intermittently, for 4 to 6 minutes until deeply browned and cooked through. Transfer to a clean plate.
04 - Heat each flatbread in a dry skillet or microwave for several seconds until soft and pliable.
05 - Lay warm flatbread on a work surface. Spread with yogurt sauce, then layer beef, red onion, tomato, cucumber, lettuce, and fresh herbs as desired.
06 - Roll each wrap tightly. Serve immediately, accompanied by additional yogurt sauce.
