# Method:

01 - In a mixing bowl, whisk together eggs, milk, salt, and black pepper until well combined.
02 - Heat butter in a nonstick skillet over medium heat. Add egg mixture and gently scramble until just set yet still moist. Transfer eggs to a plate.
03 - Slice avocado and lightly mash in a bowl. Season with a pinch of salt and chili flakes if desired.
04 - Lay tortillas flat. On half of each, sprinkle half the shredded cheddar cheese, then layer on scrambled eggs, mashed avocado, and cilantro if using. Top with remaining cheddar. Fold tortillas over to enclose filling.
05 - Wipe out skillet if necessary and return to medium heat. Cook quesadillas one at a time for 2 to 3 minutes on each side until golden and cheddar is melted.
06 - Transfer cooked quesadillas to a cutting board. Let stand briefly, then slice each into wedges. Plate and accompany with salsa, sour cream, or hot sauce as preferred.
